Phase 2 Recipes

Lunches

Here you will find mostly salads. However, soup also makes a good lunch, as do leftovers from the previous evening's meal. You can add sandwiches in Phase 2. Be creative, just use ingredients from the Phase 1 and Phase 2 Foods to Enjoy lists.

Continue using Phase 1 lunches

Most of these recipes can be adjusted as desired for more or less servings.

Some are suitable for packing and taking to work,

others are best made just before eating.

Chunky Chicken-Apple Salad

Two to three servings.

 

1 pkg. (6 oz.) Oven Roasted Chicken Breast Cuts

3 tablespoons chopped pecans or chopped walnuts

1 medium apple, chopped

1 small celery stalk, chopped

1/4 cup mayonnaise (low or no sugar)

1/4 tsp. lemon juice (optional)

 

MIX all ingredients until well blended.

 

Note: Can use other brand mayo, can use leftover chicken breast, can use other brand of pecans or walnuts, but be sure they’re of good quality. 

Easy Chicken Waldorf Salad

 

1/4 cup mayonnaise (low or no sugar)

2 tablespoons fresh lemon juice

6 ounces grilled chicken, cut up*

1 cup chopped or thinly sliced celery

1 cup chopped apple

1/4 cup chopped, dried apricots

1/4 cup walnut pieces

 

Mix mayo and lemon juice in large bowl. Add chicken, celery, apple, apricots, and walnuts; mix lightly. Cover. Refrigerate several hours or until chilled.

 

*Note: Can use 1 pkg. (6 oz.) LOUIS RICH Grilled Chicken Breast Strips, cut up

Chicken Salad with Mandarin Oranges
One serving.
 
Salad:
2 to 3 cups romaine lettuce
1/2 cup Mandarin orange sections (canned is okay if you rinse and drain)
1 to 2 tablespoons toasted sliced almonds
4 oz grilled chicken (cut into bite-sized pieces)
 
Dressing (one serving):
1 tablespoon dark sesame oil
1 tablespoon rice wine vinegar
1 packet Splenda
1 teaspoon sesame seeds (toast if desired)

 

Arrange salad ingredients in bowl. Mix dressing ingredients in a shaker and pour over salad.
