Some Phase 2 snack ideas (in addition to Phase 1 snacks):

 

Fresh fruit—Any fruit listed on the Phase 2 Foods to Enjoy list on this site (alone or with some of the suggestions below).

 

Apple with 1 tablespoon peanut butter or 1 wedge Laughing Cow Light Cheese of 1 oz cheddar cheese

 

Stewed apple: small Granny Smith apple cooked in a bit of water and sugar substitute

 

Crackers. Use only those with high fiber (3 grams or more per serving) and no trans fats/hydrogenated oils. Read package label for nutrient values and for serving sizes.

 

Triscuit crackers (7 low fat, or 6 Garden Herb, or 6 Roasted Garlic)

 

Triscuit crackers, 4, spread with 2 tablespoons natural peanut butter (about 1/2 tablespoon on each cracker)

 

Dried fruit: 6 dried apricots, 5 dried plums (prunes), 4 dried figs (avoid any dried fruit with added sugars)

 

Sandwiches can be eaten for snacks in Phase 2. Some sandwich ideas are on the Phase 2 Sandwiches page.

 

Phase 2 Snack Recipes

Tortilla Snack

From a forum.


1 whole wheat tortilla (no added sugars)
Olive oil to cover both sides of tortilla (about 1 teaspoon)
Seasoning to taste (Mrs. Dash garlic and herb and salt is good)
Parmesan cheese, if desired
 

Preheat oven to about 400 degrees F.

 

Lightly coat both sides of tortilla with olive oil, and sprinkle with seasonings. Place in the oven (you can cut the tortilla into slices beforehand if you'd like). Bake until brown on both sides, turning once (around 4 minutes per side). Top with shredded parmesan cheese, and bake another 2 to 3 minutes.

Use alone as a snack, or use as chips for dip, salsa, hummus, or use as croutons in your salad.

*Note: The poster didn’t say if this is fresh shredded parmesan or the grated from the green can.
