Kickin' Black Bean Patties with Yogurt Cilantro Dip

From dannon.com. By Rachel Ray, National Recipe Contest Runner-up. Four to six servings.

 

Cilantro Yogurt

1 cup DANNON. Plain Yogurt

1/4 cup chopped fresh cilantro

1 cup fresh salsa (or pico de gallo if you want it less spicy)

1 teaspoon ground cumin

 

For Black Bean Patties

2 cups cooked black beans (or 1 can, drained and rinsed)

1/2 cup chopped red onion

1 1/2 teaspoons ground cumin

1 tablespoon chopped jalapeno peppers (or less, to taste, and you can use canned, chopped peppers)

Cornstarch as needed

Green onion for decoration

Salt & Pepper to taste

Olive oil for frying

 

Put black beans, onion, cumin, and jalapenos in a food processor until well blended and smooth. Season to taste with salt.

 

Form the bean mixture into 12 small patties using about 2 tablespoons for each patty. Line baking sheet with plastic wrap; place cakes on the sheet and dust with cornstarch. Heat oil in large nonstick skillet. Add black bean cakes and cook until the outside is crisp and brown but the inside is tender (about 2 minutes per side). Allow them to cool slightly.

 

In a small bowl, mix the Dannon yogurt, cilantro and cumin. Place a dollup of yogurt sauce on each of the bean cakes when serving. Decorate with sliced or chopped green onion.

 

This is Phase 2 because of the cornstarch.

Veggie Sloppy Joes

 

1 pkg. (12 oz) Morningstar Veggie Crumbles

1/2 cup sugar-free barbeque sauce

1/2 cup diced onion

1 tablespoon butter or olive oil

1 cup shredded cheddar cheese

100 percent whole wheat buns (sugar free if possible)

 

In a large heavy skillet over medium heat, sauté onions until translucent. Add crumbles and cook until thawed. Stir in barbeque sauce and simmer for a few minutes over low heat. Spoon onto buns and top with cheese.
